Light Summer Indulgence : Apple Yogurt Cupcake

It's the middle of May and we all are sick of the sticky heat already. But we do crave that sweet endnote at the end of the meal. Is it only me, or do we all feel like biting into that sinful cupcake and the eat half only because the butter cream gets difficult to swallow after  two bites. The greasy lining on the palette can get very nauseating. I chose to eat a fruit or a chilled iced tea to replace dessert most of the time. But at times we do give in to temptation and buy that pastry or cupcake. I end up feeling very guilty about it.

So, what if I tell you that I'm going to share a recipe of a diet cupcake with you? Would you believe me ? I'm not joking ! Imagine, soft , flavorful, and with a frosting too ! And would you believe, it uses very simple ingredients too... 





Apple  Yogurt Cupcakes


Cake Batter (yields 12 cupcakes)
Whole wheat flour 2 cups
Olive oil ½ cups
Yogurt ¾ cups
Apple grated 2 large
Cinnamon powder ½ tsp
Salt 1 pinch
Baking powder ½ tsp
Baking soda ½ tsp
Eggs 2 nos
Honey 4 tbsp /artificial sweetener

  • ·         Beat , eggs, honey , oil, yogurt  till mixed well
  • ·         Add the apple and mix well
  • ·         Sift together whole wheat flour , cinnamon , salt ,baking powder, soda
  • ·         Gently fold into the batter
  • ·         Divide into 12 lined muffin cups
  • ·         Bake at 180 degrees Celsius for 25 mins

For frosting

Hung curd 1 ½ cups
Honey 4 tbsp
Cinnamon powder 1 tsp
  • ·         Beat hung curd , honey and cinnamon till mixed well
  • ·         Pipe over the cooled cupcakes
  • ·         Serve chilled

Cinnamon Apple Patishaptas


Cuisines all over the world, share many common aspects with each other. All Cuisines share many common cooking techniques, they have common food groups, some even have very similar dishes. Most cuisines have custards, dumplings, fritters, Wraps, pancakes etc.

Crepes are also there in most cultures and in Bengali Cuisine, the make a sweet crepe made with rice flour and its called PATISHAPTA.

I am taking a modern take on this traditional recipe and making Apple Cinnamon Patishaptas. Had recently shared this recipe with RJ Arvind on air on 94.3 Radio One one his show Arvind's Kitchen

For Patishapta 

1/4 tin condensed milk
1 cup flour
2 tbsp rice flour
125 ml water
 2 tsp Butter for frying





Mix all ingredients into a batter with coating consistency and whisk well to remove lumps 





apply butter on a non stick pan with some tissue and make 10 crepes with the above batter of 6 inch diameter 


For filling 

2 diced apples
3/4 cup grated khoya / mawa / dehydrated milk
3/4 cup sugar
1 tbsp cinnamon powder



heat apples and sugar till apples go soft and moisture evaporated making a semi chutney



switch off and add khoya and cinnamon powder and mix well




cool the mixture and roll the crepes with this mixture


Serve at room temperature or a little warm with vanilla ice cream

Apple Cinnamon Muffin



There is a barrage of cup cake makers in the market, to the extent that people have stopped focusing on the cake bit of the cup cake. considering how easy it is to make a muffin i find it lame to go buy a dry piece of sponge smothered in artificial color and sugar. Giving u a recipe of a muffin that can be used as a cup cake base too and is moist even 3 days after baking it. 

This can be topped with a white chocolate ganache as shown in the pic and decorated with sprinklers as well 



Apple Cinnamon Muffin
  
Apples 180g (grated)
Eggs 2 nos
Oil 75 ml
Sugar 120g ( powdered)
Flour 110g
Cinnamon powder 1 tsp
Green apple Crush 1 tbsp 
Baking powder ¼  tsp
Soda bicarb ¼  tsp
Salt – a pinch
Raisins 50 g (optional) 
Almonds 15 pcs chopped






  • Mix in all dry ingredients together in a large bowl 
  • Add the egg and oil and blend into a smooth paste with a fork don't over beat 
  • mix in the green apple crush 
  • Add the apples and the dry  fruits
  • spoon in cup cake liners
  • Baked for 25 minutes at 180 degrees celcuis
